Chicken Quinoa Soup Recipe

2 Cooked diced chicken breasts (Also could use leftover Rotisserie Chicken)

1 cup Quinoa

1 container of chicken broth

2 carrots peeled and cut into 1 1/2 inch pieces

2 Celery Stalks cut into 1 1/2 inch pieces

2 Large Potatoes quartered (I used sweet potatoes but you can also use white potatoes)

1 small onion diced

3 Kale leaves

1 tsp Ground Thyme

1 pinch of Salt and Pepper

Add ingredients to a pot and boil until veggies are tender.  Reduce to medium temp. Stir often until quinoa blooms.  Then let simmer until ready to serve. Enjoy.

Serves at least 4

We  live in North Carolina.  It snowed may be 2 inches the other day and life as we know it stopped.  The stores were raided.  People cleared the shelves of milk, bread, snacks and even some fruit and veggies were low at some stores.  Luckily I had gone to three different stores to stock up before the bad weather rolled in.  Schools closed for 2 days.  The kids loved it.  I knew the best way to keep them full was soup.  And this recipe was perfect.  The chicken is already cooked, so you are really just softening the vegetables. This recipe takes no time at all, but it tastes like you have been cooking all day.  I hope you enjoy this recipe as much as we did.  The boys ate it all.  There were no leftovers.  This soup goes well with cornbread or even biscuits.  They loved it and didn’t realize they were eating healthy.  Adding the quinoa gave them more dietary fiber and protein than brown rice according to an article I read. I will link that website here. This soup works great with a salad for lunch or paired with a hearty sandwich at dinner.  Either way, it’s delicious.  Enjoy!
